Sunday Pumpkin Pancake

Every Fall, people in the states go crazy about pumpkin and spices. At any stores, you see one whole aisle with all of those pumpkin products like, pumpkin cookies, pumpkin hot coco, pumpkin chips, pumpkin sodas, etc…And I was one of those people hoarding lot’s of pumpkin cans.

I ended up buying way too many cans and kept those left over cans in my kitchen anyway but it’s February and they need to go before Spring comes.

And here is what I made:)

Recipe adopted from All Recipes

A: Dry Ingredients

  • 2 cups all-purpose flour
  • 3 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice

B: Wet Ingredients

  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin purée (not pumpkin pie filling)
  • 1 1/2 cups whole milk
  • 1 large egg
  • 2 Tablespoons vegetable oil
  • 2 Tablespoons vinegar

In separate bowls, mix the ingredients and combine them and cook them on a heated pan.

This can make a good Sunday brunch!
